Yummy Apple Spice Muffins

It was cool in the house this morning. I remember days like this when I would make a quick bunch of muffins for breakfast. Not only did they taste good, but the oven make a quick blast of heat in the kitchen until the wood stove caught up. If you have a cream cheese frosting – that is a delicious addition to this recipe. If you are packing them in lunches, split and make them into a ‘muffin sandwich’.   Ingredients

1 ¾ cups flour

2 tablespoons sugar

3 teaspoons baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ teaspoon ground cloves

½ teaspoon salt (omit if using salted butter)

¼ cup butter, melted

1 egg

1 teaspoon vanilla

1 cup milk

1 cup diced Apple

Combine dry ingredients, mix in all liquid ingredients. Add diced apples and stir until just blended. Fill muffin tins (lined) 3/4 full and bake at 350F for 15 minutes.
