Blueberries… Enjoy the heat and a Healthy Smoothie


The blueberries are ripe. Many are picking these little blue juicy gems of deliciousness, eating them fresh with cream, baking pies and freezing for use later in the year. So what do you do with all these berries? My favourite ways include, smoothies for breakfast, and making either my mother-in-law Karin’s blueberry loaf or a blueberry buckle that my mother Myrtô made.

My difficulty is now my daughter has moved away to university, and I just cannot eat all that baking… So I now make smoothies and other things that use frozen blueberries.

This smoothie uses kale from the garden and chia seeds.

Brenda’s Blueberry Smoothies

1 cup frozen blueberries
3/4 cup almond milk (coconut milk is also delicious)
1 small handful frozen kale leaves (mine are already diced without the thick stems, add more leaves if you like)
1/2 frozen banana (already peeled and sliced)
1/2 tablespoon chia seeds
1 tbsp honey

1 teaspoons grated frozen ginger (I always have chunk of ginger in the freezer to grate)


Add all ingredients to a blender and pulse until smooth. If the smoothie is too thick, add extra almond milk to thin.
